Dhal Rice / Paruppu Satham

Not one of my favs but its my hubby's and my fathers fav dish. Very simple and fast to make. This dish goes well with any spicy veggie stir fry and papadoms. You can see in the pic i have done, ladies finger fry with chilli powder. My sunday cooking was done in less then 45 mins :-)

Ingrediants :-

2 cups of rice
1/2 cup of dhal
1 onion
1 chinamon
3-4 garlic
1 tsp small jeera
2 tomato
3-4 green chilli or small red chilli
curry leaves
1 tsp Tumeric Powder
2 tsp of chilli powder
ghee

Method :-

Soak the dhal for 10-15 mins.
Heat the wok and pour some ghee. Add in the chinamon, curry leaves and small jeera. Add the choppen onion and chillies. Once the onions is soft add the chopped tomato. Once the tomato is half cooked, add the tumeric and chilli powder. Stir fry for few mins.

In a rice cooker, wash the rice and put in the dhal together. Add in the mixture from the wok and add some salf. Pour abt 2.5 cups of water.

Once the rice is cooked, add one tablespoon of ghee and stir well with the rice. Ready to serve for four people.

Ghee Rice / Briyani Rice


A simple dish which i have seen my mom do since i was small. I like this dish due to its colourfulness. Chicken curry or green chicken or yogurt salad or mutton curry goes well with this rice.
Ingredients:-
2cups of Basmathi rice
2 tablespoon of garlic ginger paste
2 bay leaves
1 cinnamon
3 cardamons
3 star anise
3 cloves.
1 big onion
Frozen mix veggies or
1/2 cup of square chopped carrots
1/2 cup of peas
1/2 cup of corn
Ghee
Coriander and fried onions for garnishing.
Method:-
Soak the basmathi rice for 15-20 mins. Wash and drain the water away.
In a wok, put some ghee. When the ghee is hot, add the cinnamon, cardamons, star anise, cloves, bay leaves. Then add the chopped onions. When the onion is half cooked, add the ginger chilli paste. Stir fry for few mins.
Add the basmathi rice and the vegetables. And stir fry for 3 mins.
In a cooker rice, pour the basmathi rice from the wok. Add small salt and add abt approx of 2.5 cups of water.
Once the rice is cooked, take one tablespoon of ghee and mix well with the rice. Ready to serve.
P/S : Not sure of the measurement of water for the rice. Usually i will measure with my index finger. The water level should touch my 2nd line of my index finger.

Green Chicken



A Very easy, fast and tasty dish. My colleague thought me this dish and it taste wonderfully so good. It goes very well with ghee rice or plain rice. A fast one to make yr guests happy and hassle free for you too.


Ingredients :-

1 whole chicken (cut into small pcs)
4-5 pcs of green chillies
6 pcs of chilli padi / small red baby chilli
A big pce of Ginger
5-6 pcs Garlic
1 Tomato
5 small Onions
1 big onion
1 pce cinnamon
2 star anise
3 cloves
3 cardamon
few curry leaves or bay leave
coriander leaves
2 tablespoon of thick coconut milk.

Method:-

Marinate the chicken with tumeric and salt for awhile. Wash the chicken and drain the water away.

In a wok, add oil. When the oil is hot, add in the cinnamon, star anise, cloves, cardamon and curry leaves or bay leave. Add in the chopped big onion. Stir fry for awhile and add in the chicken. Stir the chicken and add some salt and close the lid. Do not add in any water, the water in the chicken is enough for the chicken to be cooked.

While the chicken is cooking. Blend the chilli padi, green chilli, ginger, garlic, tomato and small onions. Add little bit water while grinding for a smooth paste.

When the chicken is half cook, pour blended mixture and mix well. Close the lid till the chicken is fully cooked.

Lastly add the coconut milk and coriander leaves and mix well. Close the lid for 3-5mins.

Green Chicken is ready to serve with rice.

Green Gram Dhal (Passiparuppu)


I only know that green gram is used for sweet desserts since young. One of my brother's fav dish. When i got to know my colleague Jaya. She always tell me that for chapati she cooked green gram dal. I was amused and asked her for the recipe. It was very easy and cooked in less then 30mins. Was tasty and my hubby loved it.

Ingredients:-

1/2 cup Green Gram (Passiparuppu).
3 pcs of chilli padi (oosi millagai) if u dont have these small red baby chillies, you can use 3-4 green chillies.
1 Tomato
1 tsp coriander seeds
2 Garlic
small ginger
small ball of tamarind
1 Onion
1 tsp Mustard seeds
Curry leaves
2-3 dry red chilli

Method:-
In a pressure cooker, add in the green gram, chillies, tomato, coriander seeds, garlic and ginger. Add in some salt and little bit of oil and close the lid and put in the stove. Close the stove after 5 whistles. Wait till all the pressured air is gone out.

I prefer to grind the cooked green gram instead of mashing it. Just 2-3 quick rounds is enough.

In a pan, add a little bit of oil, when the oil is hot, add in the curry leaves, dry red chilli and mustard seeds. Then add in the onion and stir fry for awhile. Pour in the green gram mixture.

I like the green gram to be watery, so i add around 1/2 cup of water and then another 1/2 cup of tamarind mix water. Put salt according to taste and bring to a boil.

Ready to serve with chapati.

Chapathi


I have made chapati several times. I dont really like chapati but i am forced to eat sometimes coz its healthy. I only eat chapati if some potato dish is cooked or else i rather starve. Chapati is always made my hubby but it doesn't have the soft texture like i eat in the shop. He always says for a better chapati, need to add an egg or butter or milk. One day i went to my friend house and ate her chapati, it was just like i wanted and i asked her how she did it. she told me only some water and salt. I was sup rise and asked her is that all!! And she told me, the water shld be little bit warm. I came back and i did it. It came wonderfully nice and soft.

Ingredients:-

1 cup of wheat flour
some warm water to make it a firm dough.
salt.

Method:-

Add the salt in the wheat flour and stir well, then add some warm water and mould it to a firm dough. Make it into small ball shapes and sat aside for 15-30 mins. This will help the dough to be fluffy when cooked.

Take the dough roller and roll it to a round shape. Heat a flat pan in a stove. And put the dough and cook it till the dough changes colour.









Radish Stir-Fry



I dont like to eat Radish. I did this dish for my hubby. Since he like vegetarian food alot. I was thinking of something simple and fast to go along with sambar and rice. This was cooked in less then 15 mins. Recipe was given by my mom.







Ingredients :-


One long white radish
1 big onion
3 tsp of coriander powder
1 tsp of chilli powder
Pinch of tumeric powder
One small tomato
Salt to your taste


Method:-

Cut the radish into small pcs.
Cut the onion to small pcs.
In a wok, pour little bit of oil.
When the oil is hot put in the onion and stir fry till they r soft.
Put in the radish and stair fry for 2 mins.
Put in coriander, chilli and tumeric powder and stir fry for 2 mins.
Put in the chopped tomato, salt and little bit of water and cover the wok with the lid and let it cook till the radish are soft and water are evaporated.

Servings for 3.

Egg Ketchap (Egg in Sweet Soya Bean Sauce)

This is a malay dish and one of my favourite dish i wld die for. A very simply dish which is sweet and hot. This is enough for me with rice to complete my meal :-) Some like to boil the egg and add in but i prefer fried egg. Kids will love it !!



Servings : 4 people.

Ingrediants :-
4 Eggs
2 medium Onions
10 pcs of Dry Red Chilli
3 Garlic
Small pce of Ginger
Few Curry Leaves.
6 table-spoons of Sweet Soya Bean Sauce.


Method :-
1. Cut the dry chilli into half. In a pan pour some water with the dry chilli and bring to a boil. Then drain the water away and its okay if the seeds are washed away also. Grind this chilli with garlic and ginger with a lilttle bit of oil for a smooth paste.

2. In a frying pan, fry the eggs and keep aside.

3. In the same pan, pour some oil and when its hot, throw in the curry leaves and the onion. Fry til the onions are soft. Add in the chilli paste. Cook till for abt 5 mins. The paste will try to stick to the pan, if it stick alot...add a bit of water and stir fry for 2-3 mins.

4. Add in the sweet soya bean sauce and some salt (according to yr taste.). Bring it to a boil.

5. Add in the eggs and bring to a boil.

Ready to serve with rice.

p/s : I like to add half a tomato to this dish while frying the chilli paste. Just to enrich the taste and for a bit of sour taste.
